get the electrics sorted fully first. if you are in doubt of it Iwouldnt do DB drags.
power issues will cost you gear. ( when it blows up.)

can somebody explain to me how dual voice coil subs should be or can be hooked up to perform best (keep in mind i know nothing)

It depends on what VC configuration you have, how many subs and what load your amp can support. Ultimately the VC configuration is purely a means to put the best load on your amp to run your subs
eg: a amp can usally has higher RMS rating at 2ohm compared to 4ohm. So you configure the VC's in a way that will allow them to reach a 2ohm load either be it by series or parrallel wirring the subs.
Since I don't know the specs of your equipment, I cant exactly tell you how to wire anything up at this stage but one of the other guys will know the specs of your gear....or you could list them.
