Sounds more like you need a good alrounder.
$500 will get you a high quality 600W amp, leaving $500 for a single good sub.
I'd go a really nice 15. Good 15s hit as "hard and fast" as 10s or 12s, but give more bass for the money.

I want the 10 to pump fast and punchy and the 15 to pick up the low down where the 10 phases out - Could I run this set up with single channel jaycar amp (800wrms)

I also like my sub (the HPS12), but then again maybe I'm biased =D.
Go listen to some subs and pick one up yourself.

To answer the other question about running a 2510 and 2515, I'd just run two 2515s if you have the space. DD 15s (like other very good subs) tend to sound just as good as 10s. Don't let anyone tell you a 15" can't hit "hard and fast". Often people think I've got six 10s in the back, not a 15".
If fact a reviewer made that comment to me recently when he auditioned our 18" 9917.

Selling Fudd an amp (for a fraction of the real price) that had been returned by Autobarn Geelong which had been incorrectly used by AB Geelong and turned out to be faulty when Fudd started using it.
Whilst he was given a new amp after it could not be fixed, he never acknowledged any of the assistance given and bitches to this day about it.
